Elizabeth is a graduate from Cornell University's Didactic Dietetic Program and holds a Bachelor of Science degree in Nutrition. She is currently enrolled in Sodexo's Distance Education Dietetic Internship with a projected graduation date in May 2014. The details of her internship are described within this portfolio, which include a focus on leadership and an elective in school food service.
Elizabeth has a rich background in food service management and community nutrition education. She held a management position with Cornell Dining for three years during her college career, in which she was able to create and enforce policies for managing 500 student employees, while also advising 25 student managers on ways to do their jobs effectively. Elizabeth was also the food service leader of a summer camp during the summer of 2013, in which she planned, cooked, and served nutritious lunches for 60 children daily while managing 3 kitchen volunteers.
Elizabeth's community education experience was positively impacted by her nutrition supervised coursework with Michele Lefebvre, Cornell Dining's dietitian. Elizabeth assisted Michele in implementing food demonstrations in dining halls, promoting themed nutrition education such as Mushroom Mania. Elizabeth also had the chance to use her own creative skills developing nutrition education for teens in the Cleveland Botanical Garden's Green Corps.
Elizabeth has enjoyed her experiences in all of the various avenues of dietetics practice. She is very excited for what her future career will hold, but is most looking forward to the positive impact she will be able to have on her community's health.
